I would like to please submit a feature request.
Currently, within the Simple Schema item “LocalBusiness” there is no way to set up global Opening Hours. Instead, the Opening Hours fields have to be completed on each and every individual Post.
If you apply the LocalBusiness schema to many Posts, this results in a lot of extra work and time, because you have to set up Opening Hours on each Post where you want them to appear.
Instead, it would be great to be able to set default Fixed Value Opening Hours within the Edit Simple Schema page, while still having the option to set a different time.
This way, you could apply LocalBusiness to lots of pages all at once and not have to go to each page and set up Opening Hours again and again. But if you have one page that needs special Opening Hours, you could still go to just that one page to create the special Opening Hours.

The use of “local Business” in Simple Schema Item is for the case where you have CPTs as business entry in a directory.
If you want to have the “same” Local Business Schema, please use the “Advance Schema Item” and create a Local Business schema there.
You may use the preset of “Local Business” to populate the most-used properties and then tinker according to your need.After setting up advance schema, choose this as a “Global” schema un plugin settings.
